A favorite with new fresh vegetables
4 cups onions, cut big
5 cups Wax Beans, ended and snapped in desired bite size pieces
5 cups Green Beans, ended and snapped in desired bite size pieces
1 1/2 cups Peas, shelled
2 cups Carrots, cut in desired bite size pieces
10 cups White & Red New potatoes, pending on size leave whole, cut in half or cubed with skin on
2 pkg Knorr Swiss Veg Soup Mix
2 1/2 cubes Knorr Swiss Veg bouillon
Water to barely cover vegetables
Boil until vegetables are almost cooked. Save stock, as you drain vegetables. Save 2/3 in a pot and bring to a boil.
Melt: Approx 3/4cup Butter or Margarine
Add; Approx 3/4 cup flour or Gluten free flour to make a roux
Cook while stirring sauce. Season with salt and pepper as needed.
Thin sauce with milk.
Salt & Pepper to taste. Once cooked, pour sauce over vegetables. enjoy!
This makes 3/4 of a 16 gallon pot.
